Here are five new restaurants to try in September from Spanish tapas, authentic Mexican flavors to Italian and Japanese sushi.

Sushi Mamoru

Leading Nation is bringing Chef Hirofumi Chiba’s third-generation mastery of traditional edomae sushi to Sushi Mamoru in Wan Chai. Mamoru, which translates to “protect” in Japanese, represents the Chef’s commitment to preserve and safeguard sushi traditions that are inherent to the oldest and most respected sushi counters in Japan.

Sushi Mamoru offers Takumi Omakase over 20 dishes that highlights the transition of seasonality through the Chef’s point of view, and a shorter Kiwami Omakase menu, which will be available for lunch only.  From hand-blended aged Hokkaido rice to wasabi sourced directly from famed farmer Keiichi Tashiro in Shizuoka, Chef Chiba is dedicated in refining the subtleties of taste and texture in every component of his menu.

Aligning with the philosophy of Mamoru, Chef Chiba embraces sustainable practices such as using line-caught fish instead of net fishing, and adopting paper-free approach from culinary preparation to the guest experience.
